Healthy Honey Ginger Loaf


I am so used to my older sister calling me dorky and corny that I have now decided not to try to be anything BUT my assigned adjectives! 

Therefore I am writing to you today to share how fun and satisfying it is to try out a new recipe on a spring morning like today!! HA

Honey and Ginger Loaf! I love ginger and have a special spot in my heart for honey as well so it was perfect! 

The recipe is actually really healthy. Whole wheat flour is used, butter (which i have recently discovered is a necessary animal fat for our bodies) and there is no sugar!!

Here is the recipe below, I hope you ENJOY:

Ingredients:

2 1/2 cups (10oz) of whole wheat flour
3/4 cup (6oz) of unsalted butter (softened) 
1 cup (8oz) of organic honey
2 eggs
1 cup (8oz) of soy milk
2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger 

** I would add a little more ginger if you want to really taste it in the loaf. 

Preheat oven to 165 Degrees Celsius.
In a medium sized bowl, combine the softened butter with the organic honey. Beat in 1 egg thoroughly before beating in the second egg. 
Pour in the soy milk (or whatever milk you prefer) and mix well.
In a separate medium sized bowl, mix the flour, baking soda and spices. 
Add the dry ingredients to the wet ingredients through a sieve. Stir the mixture until just smooth.
Pour mixture into a greased loaf pan and Bake for 1 hour. 
** My oven is stronger than others so I baked mine for 45 minutes and it was enough. Stick a souvlaki stick into your cake - if it comes out dry it is ready! 

Cool in the tin for 10 minutes before turning it out on a wire rack to cool properly.
You can use powdered sugar as a topping if you want once the loaf has cooled.
